Whole Wheat Eggless Pancakes


As a kid I was always fascinated by seeing pancakes in breakfast while watching western movies/series. From that time I always wanted to have those heavenly treats. I didn’t know how to make it nor did my mother knew. So I had never had the opportunity to have pancakes as a kid. I tried my first pancakes, the blue berry and oats pancake, made by my brother in-law and I instantly fell in love with them. After that I have tried  various recipes from youtube videos and finally I came up with my own recipe which suits my taste palette . This is a super easy recipe and bare minimum utensils are required. Just a blender and frying pan and you are good to go.



Ingredients
1/2 Cup Whole wheat flour
2 Overly Ripped Banana
1/2 Cup Milk
1 TBSP Jagger Powder/ Sugar
A pinch of Salt
1/2 TSP Pumkin Pie Spice
1 TBSP Ghee/Butter


Process:
Just through in all the ingredients except butter in a blender and blend until smooth. The mixture should be of pouring consistency.
Heat a frying pan and grease some butter. Pour or scoop the batter onto the pan. Once Brown on both sides and serve hot.
Add desired toppings like nut butter, yogurt, fruits. My favourite is some sauted pecans and apple drizzled with honey and a teaspoon of Pumkin Pie spice. This is one heavenly combination.

Variations:
Instead of whole wheat flour you can use Buckwheat, oat flour. I

Solo trip to Melaka

My husband, Devdeep, had gone for a week to India on a business trip. I was all alone at home. Staying alone is always an issue as I was raised in joint family. Week days were still okay as most of the time was spent in office. So for the weekend I decided to go to Melaka. D was at his sasural (in-laws place) sleeping peacefully at the time I called him to inform that I was going to Melaka. After having my breakfast, I left for Melaka.
